We drove home from Montana to LA on Monday and I had a ton of greens that I didn't use in Montana so they made the long trek to LA with us. Needless to say they had seen better days. What to do with them? Make an updated version of baked eggs with kale, tomatoes and chickpeas.

I have been eating this super healthy and delicious salad all summer long. It combines all the flavors I love in the summer: tomatoes, basil, avocado and fresh corn. I made this for my family recently and they went crazy for it, so I thought I would share it here too. When I first served it, I served it over a flank steak but I think it is hearty and tasty enough that is stands up all on its own.

Buttermilk Fried Chicken

We don't have a lot of food traditions in my family, but fried chicken on the 4th of July is most definitely one of them. Growing up we had store bought (from Publix! and you all know my love of all of publix's prepared food!) then head down to watch the fireworks. Here is my version of that fried chicken so there is no excuse to have fried chicken (don't worry I think this year I am going to be close enough to a Publix to grab some before the fireworks begin)
