Watermelon Granita


Watermelon Granita 

  • 1 1/2 - 2 lbs seedless watermelon, rind removed and cut into 2 - 3 " chunks. 
  • 1/4 cup simple syrup
  • 2 Tbs. fresh lime juice
  • handful of fresh mint

Add watermelon, simple syrup, lime juice and mint to a blender. Blend until smooth. 

Strain the watermelon juice into a 13" x 9" pan. Carefully place the pan into the freezer. 

Every 30 minutes for the next 2 hours, remove the granita from the freezer and scrape with a fork until the granita is light and fluffy. 

Serves 6 to 8.
