Spice Chicken with an Middle Eastern Inspired Yogurt Sauce

For the chicken:

  • 1 lb chicken breast cut into bite sized pieces

  • 1 Tbs ground coriander

  • 2 tsp. paprika

  • 1 tsp. oregano

  • 1 ground cumin

  • 1 tsp. onion powder

  • 1 tsp. garlic powder

  • 1 tsp salt

  • 1/2 tsp pepper

  • 4 Tbs. olive oil, divided

For the yogurt sauce

  • 1/2 cup mayonnaise

  • 1/2 cup Greek yogurt

  • 1 tsp. sugar or honey

  • 2 Tbs. apple cider vinegar

  • 1 tsp. garlic powder

  • 2 Tbs. lemon juice 

  • Kosher salt and freshly ground black pepper

In a large bowl combine the chicken, coriander, paprika, oregano, cumin, onion powder, garlic powder, salt, pepper, and 2 tablespoons of olive oil. Toss well and let marinate for 30 minutes or up to 12 hours.

While the chicken is marinating make the yogurt sauce by combining the mayonnaise, yogurt, sugar or honey, apple cider vinegar, lemon juice, and a large pinch of salt and pepper. Store in the refrigerator until ready to use.

When ready to eat warm the remaining 2 tablespoons of olive oil over medium high in a large skillet. Cook in an even layer for 6 to 8 minutes turning halfway until a meat thermometer reaches 165°F. on a meat thermometer. Let the chicken rest for 5 minutes.

Serve the chicken topped with a large helping of the yogurt sauce alongside a simple salad and some pita.

Makes about 4 servings.
