Sheet Pan Fish Tacos with Green Beans and a Citrus Salsa
3 oranges, peel removed and cut into segments
Juice of 1 lime
1/4 cup minced red onion
1/2 cup fresh herbs like parsley or mint
1 avocado, pit removed and diced
kosher salt
1 lb green beans, trimmed
1/4 cup olive oil, divided
1 tsp. paprika
1 tsp ground cumin
1/2 tsp. ground coriander
1 lb white fish like halibut or mahi mahi
Corn tortillas
Preheat oven to 425°F. Line a baking sheet with parchment
In a medium bowl, combine the orange segments, lime juice, red onion,herbs, avocado, and large pinch of salt. Mash together slightly, the set aside.
Place green beans on the prepared baking sheet and toss with 2 tbs. oil and large pinch of salt. Roast green beans for 8 minutes..
While the green beans are roasting toss together in a small bowl the paprika, cumin, coriander, large pinch of salt, and remaining 2 Tbs. oil. Mix well then coat the fish with the spice mixture.
Remove green beans from oven and place fish on one side of the baking sheet. Return to the oven and continue cooking for anther 6 to 8 minutes or until green beans are fork tender and fish is flaky. (Best way to tell if fish is done is by inserting the tip of a paring knife. If it goes in without any resistance, the fish is read)
Make the tacos by laying a couple green beans on top of a tortilla, followed by the fish and then a large drizzle of the orange salsa. Repeat with remaining ingredients and serve immediately.
Makes about 4 servings.
