Baked Strawberry Pancake

  • 1 ½ cups flour 

  • ⅓ cup sugar 

  • 2 teaspoons baking powder 

  • ¾  teaspoon salt

  • 1 ¼ cups Greek Yogurt

  • 2 eggs

  • Zest of 1 lemon 

  • 3 tbs melted butter, plus. more for pan

  • 1 tsp vanilla extract

  • 1 cup thinly sliced strawberries

Preheat oven to 350F. Place a 10” cast iron skillet in the oven.

In a medium bowl whisk together flour, sugar, baking powder, and salt. 

In a small bowl whisk together sour cream, eggs, lemon zest, melted butter, and vanilla extract. 

Whisk the wet ingredients into the dry ingredients until just barely combined. 

Carefully remove the skillet and place 1 tablespoon butter in the hot pan and swirl to cover. Pour the batter into the pan then top with strawberries in an even layer. Sprinkle with turbinado sugar and bake for 30 to 35  minutes or until golden brown. Serve slices with a drizzle of maple syrup
