Thai Inspired Chicken Burgers with Mango Slaw
Thai Inspired Chicken Burgers with Mango Slaw and Spicy Mayonnaise
For the burgers
1 lb ground chicken
1 Tbs. fresh ginger
1 Tbs. Fish sauce
1 clove minced Garlic
1/4 cup diced Green onion
1 tsp. ground cumin
1/4 cup chopped cilantro
For the Mango Slaw
1/2 mango, julienned
1/2 cup julienned celery
1/2 cup julienned carrots
2 Tbs. Cilantro
Juice and zest of 1 lime
Large pinch of salt
For the spicy mayonnaise
1/4 cup mayonnaise
1 Tbs. sriracha or favorite hot sauce
Combine the chicken, ginger fish sauce, lime zest, garlic, green onion, cumin and cilantro in a bowl. Make into patties and refrigerate for 10 to 15 minutes. (The mixture will be sticky)
In a medium bowl combine the mayo, celery, carrots, cilantro, lime juice and big pinch of salt. Mix well and set aside.
In a small bowl combine the mayonnaise and hot sauce. Set aside.
When ready to cook burgers, heat a cast iron pan (or grill) and 2 Tbs. oil over medium heat. Cook burgers for 12 minutes, flipping halfway through (cook time will depend on how thick your burgers are. (For anything with chicken i like to use a meat thermometer to make sure it is done)
Serve burgers topped with a dollop of the spicy mayonnaise and a 2 tablespoons of the slaw. Serve on a toasted bun or eat as is.
