Baked Halibut with Tomatoes, Olives, and Capers
2 Tbs. olive oil
1 onion
2 cloves garlic
28 oz. can diced tomatoes
2 Tbs. capers
1/4 cup crushed black or green olives olives
4- 6oz. halibut filets
Serve over farro or your favorite grain
Preheat oven to 425°F.
In a medium oven safe 10” saute pan warn the olive oil. Add the onion and saute for 4 to 6 minutes or until translucent. Add the garlic, and cook for another 30 seconds. Add the tomatoes, capers, and olives and cook for about 2 minutes until slightly reduced. Carefully add the halibut and submerge it in the tomato mixture.
Bake halibut for 10 minutes or until a knife can be inserted without any resistance.
Makes 4 servings.
