Grilled Halloumi and Zucchini with a Strawberry Basil Salsa

Grilled Halloumi and Zucchini with a Strawberry Basil Salsa

  • 1/4 red onion, minced

  • 1/4 cup red or white wine vinegar

  • 1 cup strawberries, diced about 1/2”

  • handful mint or basil, roughly chopped

  • Oilve oil

  • 1- 8oz container halloumi sliced 1/2” thick

  • 1 zucchini sliced 3/4” thick

In a small bowl combine the onion, vinegar, and strawberries. Mix well and let sit. Fold in basil or mint right before serving.

Place halloumi and zucchini on a sheet tray. Brush each slice of halloumi and zucchini with olive oil and sprinkle salt and pepper on the zucchini (not the halloumi)

Preheat a grill pan over medium high heat.

Grill the zucchini and halloumi for about 1 to 2 minutes each side. Remove and repeat with remaining slices.

Serve immediately topped with a dollop of the strawberry mint salsa.
