Seared Scallops with a Tomatillo Avocado Salsa

  • 1/2 lb tomatillos, husks removed

  • 1 jalapeno, seeds removed roughly chopped

  • 1/4 cup minced white onion

  • handful of chopped cilantro

  • 2 Tbs. lime juice

  • salt

  • 1 avocado diced

  • 1 lb scallops

In a blender add the tomatillos, jalapeno, onion, cilantro, lime juice, and large pinch of salt. Pulse on high until desired consistency. Set aside and allow flavors to come together. Fold in diced avocado (or puree it in if you want a smoother consistency)

Preheat a cast iron pan over high. Add oil into the pan followed by the scallops. Cook the scallops for 1 minute each side, cooking in batches if needed

Serve the scallops immediately with a dollop of the salsa,
