Peanut Butter Swirl Brownies

I recently discovered roasted peanut flour. I had never heard of it before - have you? Well I am hooked, once you open the bag, the amazing aroma of delicious roasted peanuts is a total game changer. Once I tasted it, I knew it would be perfect in peanut butter brownies. 

Lets breakdown this recipe

A chocolate brownie batter is made with melted butter, chocolate, sugar, eggs, vanilla extract, peanut flour, cocoa powder and salt. A peanut butter mixture is then made by combing peanut butter, powdered sugar and melted butter. A layer of chocolate batter is added to 8 x 8 square baker. Dollops of peanut butter go on top then the remaining batter and peanut butter mixture. With a toothpick or skewer swirl together the chocolate batter and peanut butter. Bake and eat!

Well, two works - chocolate and peanut butter. It is the ultimate delicious combination!

Tips/Tricks/Shortcuts

First off if you can't find roasted peanut flour, no worries just use regular flour or if you are gluten free, try gluten free flour. Also you can skip the peanut butter layer if peanut butter is not your thing (no judgement!) The brownies will still be delicious. Lastly, try adding a little sea salt to the top of the brownies for the ultimate salty sweet deliciousness.

Peanut Butter Swirl Brownies


For the brownie batter

  • 1 stick unsalted butter, melted 
  • 4 oz. bittersweet chocolate, roughly chopped
  • 1 cup granulated sugar 
  • 4 eggs 
  • 2 tsp. vanilla extract 
  • 1 cup peanut flour (or all purpose or gluten free flour) 
  • 1/4 cup cocoa powder 
  • large pinch of salt 

 
For the peanut butter swirl

  • 2 Tbs. unsalted butter, melted 
  • 1/2 cup creamy peanut butter 
  • 1/4 cup powdered sugar 

Flaky sea salt

 

Pre-heat oven to 350°F. Line an 8 x 8 baking pan with parchment paper and spray with non-stick spray.

In a large bowl, combine melted butter and chocolate. Stir until the chocolate melts. Add sugar, eggs and vanilla extract. Whisk together. Add flour, cocoa powder and large punch of salt. Stir until well combined but don't over mix (especially if using regular all-purpose flour)

In a small bowl combine butter, peanut butter, and powdered sugar. Stir until smooth. 

Assemble the brownies by adding half of the chocolate brownie batter to the prepared pan. Add 4 or 5 dollops of the peanut butter mixture. Repeat steps by adding the remaining batter and peanut butter. With a toothpick or skewer, swirl the layers together. 

Bake for 30 minutes or for "cakier" brownies bake for 35 minutes. 

Allow brownies to cool in pan for 15 minutes then serve warm or at room temperature.
