Cheesy Baked Tortellini with Broccoli and Tomatoes
1 onion, diced
3 cloves garlic, minced
1 tsp oregano
1 ttsp fennel
`1 Tbs tomato paste
1 lb ground turkey
kosher salt
1/2 cup sun dried tomatoes, roughly chopped
1 cup cherry tomatoes
1 cup brocolli cut into small florrets
1 tbs beef bouillon mixed with 1 cup hot water
2 cups melty cheese (such as mozzarella)
1 cup ricotta
Preheat oven for 375F.
In an oven proof pan, saute the onion for 5 minutes in the olive oil until soft and transulucent. Add the garlic, oregano, and fennel. Saute for 30 seconds. Add the tomato paste, ground turkey, and large pinch of salt and cook until the turkey is cooked through and brown, breaking it up into small pieces as it cooks. Add in the sun dried tomatoes, tomatoes , broccoli, and beef bouillon. Stir well. Top with cheese and dollops of ricotta.
Bake for 30 minutes covered with foil. Remove the foil and cook for another 10 -15 minutes or until the cheese is golden brown.
Makes about 4 servings.
