Turkey Burgers with Homemade Ketchup
For the ketchup:
2 tablespoons olive oil
1 medium onion, chopped medium
2 cloves garlic, minced
1 tablespoon tomato paste
1 teaspoon kosher salt
2 tsp. ground mustard
1/4 tsp ground cloves
1/4 tsp. allspice
Pinch of cayenne pepper (depending on how hot you want it)
1 (28-ounce) can diced or pureed tomatoes
2 Tbs brown sugar
1/4 cup cider vinegar
For the burgers
1 lb ground turkey
2 Tbs. worchestershire sauce
1/4 cup thinly sliced green onions
salt and pepper
Serve on a hamburger bun with lettuce, avocado, and homemade ketchup
To make the ketchup begin by sauting an onion in the olive oil for 4 to 6 minutees or until translucent. Add the garlic, tomato paste, salt, and spices and saute for 30 seconds. Add the brown sugar, vinegar, tomato paste, and puree. Bring to a boil, then reduce the heat to low and cook for about 45 minutes or until thick. Remove from the heat and place in a blender.
Blend until smooth (Optional push through a fine mesh sieve to create smooth consistency ). Taste for salt.
To make the burgers combine the ground turkey, worchestireshire sauce, green onion, and large pinch of salt and pepper. Divide the mixture into 4 patties about 1” thick.
Warm the oil in a cast iron pan. Cook the burgers for 8 minutes over medium heat, flipping halfway through.
Serve the burgers warm on a bun topped with avocado, romaine, and homemade ketchup.
