Roast Salmon with Lemon Butter Sauce
4 - 6 oz. salmon filets
8 Tbs. unsalted butter
2 cloves garlic, minced
1 shallot, diced
1/4 cup half and half
1/2 cup vegetable stock
Juice and zest of 1 lemon
salt and pepper
Serve with roast vegetables and your favorite grain ( I used a mixture of farro and lentils)
Preheat oven to 425F°
Line a sheet tray with parchment paper. Place the salmon skin side down and drizzle with olive oil and sprinkle with salt and pepper. Roast the salmon for 8 to 10 minutes or until the tip of a pairing knife is easily inserted.
While the salmon is roasting make the sauce. Melt the butter over low heat. Add the shallot and garlic and cook for 1 to 2 minutes or until soft. Mix in the half and half, stock, and lemon zest and juice and cook over medium low until the sauce has thickened slightly, about 5 to 7 minutes. (Should be able to lightly coat the back of a spoon) . Optional: Pour into a blender and blend for 15 seconds. This will help make the sauce super creamy. Add in chopped fresh herbs and taste for salt and pepper.
Serve the salmon topped with a large spoonful of the sauce alongside roast vegetables and grains.
