Lemony Kale Pasta
One Pot Lemony Kale Pasta
1 lb dried pasta
2 Tbs olive oil
2 shallots, thinly sliced
4 cloves garlic, minced
1/2 tsp. red pepper flake
kosher salt
Peel of 1 lemon, thinly sliced
1 bunch kale, ribs removed and roughly chopped
1/4 cup lemon juice
1/2 cup Parmesan cheese
Cook pasta according to packaging instructions in a large pot of boiling salted water. Before straining save 1/2 cup of the pasta cooking liquid. Strain and set aside.
In a large saute pan warm the olive oil over medium heat. Add the shallot and garlic and saute for 30 seconds. Add the chili flakes, large pinch of salt, and lemon peel and cook for 30 seconds. Add in kale followed by lemon juice and place a cover on the pan. Wilt the kale for 2 to 3 minutes. Add in the cooked pasta followed by the Parmesan cheese and toss well. Taste for salt and pepper, adding more Parmesan as needed.
Serve immediately
Makes about 4 servings.
