Chicken with a Creamy Sun Dried Tomato Sauce and Spinach

Chicken with a Creamy Sun Dried Tomato Sauce and Spinach (otherwise known as Marry Me Chicken)

  • 1 lb chicken breast

  • 2 Tbs. olive oil

  • 2 shallots, minced

  • 2 cloves, minced garlic

  • 1 cup chopped sun dried tomatoes, drained

  • 1 cup half & half

  • 1 cup chicken stock

  • 1/2 lb baby spinach

  • Serve over rice

In a large saute pan warm the olive oil over medium heat. Add the chicken and brown for about 2-3 minutes, flipping halfway through. Remove chicken and set aside.

In the same pan over medium heat, add the shallot and garlic and saute for 30 seconds. Add the sun dried tomatoes followed by the half and half and stock. Bring to a simmer then remove from heat. Pour sauce into a blender and blend until smooth.

Return sauce to the pan and add the chicken breasts. Cook the chicken for about 5 to 7 minutes or until the chicken reaches 165F on a meat thermometer and the sauce is slightly reduced.

Taste for salt and serve immediately over rice and a salad or greens.

Makes 2 to 4 servings.
