Cheesy Cheddar Crackers

  • 1 cup all purpose flour

  • 1 tsp. salt

  • 1 tsp. black pepper

  • 4 oz. sharp cheddar, grated

  • 4 oz/8 Tbs. unsalted butter

Preheat oven to 350°F.

In a small bowl whisk together the flour, salt, and pepper. Set aside.

In the bowl of a food processor pulse to combine the cheddar and the butter. Add the flour mixture and pulse for another 15 seconds until a dough is formed and it starts to pull away from the sides of the food processor.

Place dough on a clean surface and bring into a ball with your hands. Wrap with plastic wrap and flatten into a disc. Refrigerate for 30 minutes.

Roll the dough out about 1/2” thick on a lightly floured surface. Using a 2” cutter (or whatever size you want) cut out the dough, rerolling scraps as needed.

Bake on a parchment lined baking sheet for about 18 to 20 minutes or until the edges are golden brown. (if you want extra crispy crackers bake for another 2 to 3 minutes)

Makes about 24 - 2” crackers.
