Chicken Salad with Avocado, Lime, Herbs and Crunchy Breadcrumbs

  • 1/2 baguette or a couple of pieces of stale bread

  • olive oil

  • salt

  • Zest and juice of 1 lime

  • 2 shallots minced

  • 1/3 cup olive oil

  • 1 rotisserie chicken, meat pulled and shredded

  • 2 avocados, thinly sliced

  • 1 handful fresh herbs, roughly chopped

Cut stale bread into medium sized pieces. Place in a food processor, working in batches if needed, and pulse until bread is chopped.

Place breadcrumbs in a large saute pan. Drizzle with olive oil and pinch of salt and toast breadcrumbs over low until golden brown about 2-3 minutes. Set aside.

In a small bowl toss together the zest and juice of 1 lime and shallots, Let sit for 5 minutes. Drizzle in olive oil and a large pinch of salt and mix well.

Make the salad in a large bowl by combining the chicken, avocado, and herbs, Drizzle with lime vinaigrette and toss well. Top with breadcrumbs and serve.

Makes about 4 servings.
