Roast Salmon with Peach, Avocado, and Corn Salsa

For the salmon

  • 1 Tbs brown sugar

  • 2 tsp. smoked paprika

  • 2 tsp. onion powder

  • 1 tsp. garlic powder

  • 1 tsp. chili powder or cumin powder

  • 1/2 tsp. salt

  • 4 Tbs. olive oil

  • 4 - 6 oz pieces of salmon

For the salsa

  • 1 cup diced peaches

  • 1 cup diced avocado

  • 1 cup fresh corn kernels

  • 1 cup blanched green beans, cut into 2” pieces

  • 1/4 cup minced red onion

  • 1/4 cup lime juice

  • 1 Tbs. olive oil

  • salt and pepper

Preheat oven to 450F. Line a sheet tray with parchment paper.

In a small bowl combine the brown sugar, smoked paprika, onion powder, garlic powder, chili powder, salt, and olive oil. Mix well.

Place the salmon skin side down on the prepared sheet tray. Spread the seasoning mixture over the salmon.

Roast the salmon for about 8 to 10 minutes or until the tip of a paring knife can easily be inserted.

In a large bowl combine the peaches, avocado, corn, red onion, lime juice, olive oil, and big pinch of salt and pepper

Serve salmon with a spoonful of the salsa on top over a heaping pile of rcipe.

Makes 4 servings.
