Lettuce Cups with Ground Turkey in a Soy Ginger Sauce

  • 1 tablespoon olive oil

  • 1 pound ground turkey

  • 1 onion, diced

  • 2 cloves minced garlic

  • 2 Tbs. grated fresh ginger

  • 1 8-ounce can whole water chestnuts, drained and diced

  • 1/4 cup soy sauce

  • 2 Tbs. rice wine vinegar

  • 1/2 cup hoisin sauce

  • Garnish with sliced green onions and a drizzle of sesame oil

  • Serve on leaves of lettuce (butter lettuce or romaine works well here

In a medium saute pan warm the olive oil over medium. Add the ground turkey cook until the turkey is browned, about 4 to 5 minutes. Add the onion and cook for anotheer 4 to 6 minutes or until the onion is translucent. Add the garlic, ginger, and water chestnuts and cook for 30 seconds. Add the soy sauce, rice vinegar, and hoisin sauce and toss well.

Top the turkey mixture with green onions and a drizzle of sesame oil. Serve the turkey on the leaves of butter lettuce.

Makes about 2 to 4 servings (depending on how hungry you are)

***Also note this is an older picture lettuces cups where I added in green beans. If you want to add green beans, add them when you add the onion to cook
