Kale and Chicken Grain Bowl with Toast Coconut and Mango
1 cup cooked quinoa
1 cup cooked farro
1 bunch kale, stems removed and roughly chopped
1 cup cooked and shredded chicken
1/2 toast coconut flakes
1/2 cup fresh mango, diced
1/2 cup roughly chopped toasted cashews
For the dressing
1/4 cup lime juice
1/4 coconut oil
2 Tbs. toasted sesame oil
1 tsp. honey
2 Tbs. soy sauce
In a big bowl toss together the quinoa, farro, kale, chicken, coconut flake, mango, and toasted cashews.
In a small bowl whisk to combine the lime juice, shallot, honey, and soy sauce. Add the coconut oil and sesame oil and whisk well.
Drizzle the dressing over the kale mixture and toss well. Taste for salt and pepper and serve immediately.
