Garlicky Broiled Skillet Shrimp
2 lbs. large sized shrimp, peeled and deveined
3 Tbs. olive oil
1 tsp. kosher salt
2 Tbs. unsalted butter
3 cloves garlic, minced
1/2 tsp. dried red pepper flakes (optional)
3 Tbs. freshly squeezed lemon juice
Garnish with a handful of chopped parsley
Preheat the oven to broil and place a cast iron skillet in the oven as it preheats.
Place the shrimp, olive oil, and salt in a large bowl and toss well.
Once the oven is preheated carefully remove the skillet and add the shrimp to it in an even layer Return the shrimp to the oven and cook the shrimp without disturbing them until the undersides are golden brown, about 3 minutes. Carefully flip each shrimp over and add the butter, garlic, and red pepper flakes to the pan. Return the pan to the oven for another 30 seconds - 1 minute allowing the butter to melt and garlic to turn golden brown. Stir well to coat the shrimp with the garlicky butter. Add the lemon juice and parsley to the pan and stir well to combine. Serve immediately.
