Fridge Foraging: Naan with Hummus, Tzatziki, and Fried Eggs
I took a couple weeks off from cooking after the baby came - we were surviving on the generosity of food from our friends. I am back now and it feels great to be cooking again and obviously fridge foraging again.
Tonight the options were either chicken noodle soup or naan with all the toppings and the naan won. Great choice since I can never turn down a fried egg.
Naan with Hummus, Tzatziki, and Fried Eggs
- 1 zucchini, grated and liquid gently squeezed out
- kosher salt
- 1 cup Greek yogurt
- Juice of half a lemon
- freshly cracked black pepper
- 4 Tbs. butter
- 2 Tbs. Sriracha hot sauce
- 1/4 cup store bought hummus
- 4 fried eggs
- 2 pieces of naan or pita bread, warmed
- Green onions for garnish
- Top with favorite Everything Bagel seasoning (can find it at Williams-Sonoma or at Trader Joes)
In a small bowl make the tzatziki by combining the grated zucchini, yogurt, lemon juice and a pinch of salt and pepper. Set aside.
In a small pan or sauce pot melt the butter oven medium heat. Whisk in Sriracha. Set aside.
Assemble the naan by spreading two tablespoons of hummus over a piece of naan. Top with a couple large dollops of the tzatziki, followed by two fried eggs. Drizzle the hot sauce over the top then garnish with green onions and a sprinkle of the Everything Bagel seasoning. Repeat with remaining ingredients.
Serve immediately.
