Brown Butter White Chocolate Macadamia Nut Cookies

  • 1 3/4 cups all-purpose flour

  • 1/2 teaspoon baking soda

  • 1/2 tsp. salt

  • 12 Tbs. unsalted butter

  • 3/4 cup brown sugar

  • 1/2 cup granulated

  • 1 tsp. vanilla extract

  • 1 large egg

  • 1 cup white chocolate chips

  • 3/4 cup macadamia nuts, chopped

  • Flaky sea salt

Preheat oven to 350°F. Line two sheet trays with parchment paper.

In a medium bowl combine the flour, baking soda, and salt.

In a medium saute pan brown the butter. Let cool slightly. Add the butter to the bowl of a stand mixer and mix on low until the butter and brown sugar are combined. Add the vanilla and egg and mix on medium until incorporated. Add the flour mixture and mix on low until barely combined. Fold in the white chocolate and macadamia nuts.

Using a small ice cream scoop or two spoons, scoop out the batter and place on the prepared sheet tray. Sprinkle with sea salt and bake cookies for about 12 to 14 minutes or until the cookies are golden brown. Let cool on a wire rack before eating.

Makes about 18 cookies.
