Broccolli and Brussels Sprout Pasta

Broccolli and Brussels Sprout Pasta

  • 12 oz dried pasta

  • 1 head broccoli, cut into florets and the stem diced into 1/4” pieces

  • 2 cups Brussels sprouts, thinly sliced

  • 1/2 lb Italian sausage, chicken or pork

  • 2 cloves garlic, minced

  • 1/2 cup vegetable stock

  • 2 Tbs. butter

  • Parmesan cheese, red pepper flakes

Cook the pasta in a large pot of boiling water according to the packaging instructions. Remove the pasta with a slotted spoon.

In the same pot of boiling water, blanch the broccoli. Drain and shock in an ice bath to prevent further cooking.

In a large saute pan brown the sausage over medium high with the olive oil.

Add the broccoli stems and Brussels sprouts and cook for another 5 minutes. Add the broccoli florets and the pasta and cook for another 3 minutes allowing the pasta to absorb the flavor.

Fold in butter and sprinkle with Parmesan cheese and red pepper flakes.

Serve immediately.
