Grilled Fig and Prosciutto Pizza

  • 1 dough round of pizza dough, store bought or homemade 
  • 1/2 cup fig preserves 
  • 8 pieces of proscuitto 
  • 1 pint fresh figs, cut in half 
  • 1/4 cup goat cheese 
  • 2 cups arugula 
  • Flaky sea salt or aged balsamic vinegar to drizzle 

Pre-heat your Traeger or grill to high heat. 

On a well floured surface, divide your dough in half. Roll one half into a diameter of about 8" to 9" Top the dough with half of the fig preserves, prosciutto, figs and goat cheese. 

Either in a cast iron skillet or on a sheet tray, place the pizza into the grill. Grill the pizza for about 10 minutes or until the crust is golden brown and the figs are soft. 

Repeat with remaining dough and ingredients. 

Serve pizzas topped with arugula as well as a drizzle of balsamic vinegar and flaky sea salt. 

Makes 2 pizzas.
