Avocado Green Goddess Dressing
Mayonnaise really isn't my jam. Growing up we used to have bologna sandwiches with lots of mayo pretty much every day for lunch at school. I can still taste those nasty sandwiches. There was no crunch or texture just soft sandwich bread, bologna and mayonnaise. To this day I still can't have mayo on a sandwich.
But....I do love creamy salad dressing so I am constantly searching for ways to make dressing creamy without the use of mayo. Enter avocados. By swapping out the mayonnaise for avocado in this salad dressing you have all the creaminess of a typical green goddess salad dressing but without the mayonnaise.
Feel free to adapt this recipe: you could also add in some lemon zest, shallot or anchovy. The key to this recipe (like any salad dressing) is adding enough salt so make sure to taste for salt before serving.

Avocado Green Goddess Dressing
- 2 ripe avocados, cut in half and pit removed
- 6 Tbs. champagne or white wine vinegar
- 1/4 cup herbs, soft herbs such as chives, tarragon, and parsley
- 2 cloves garlic
- 1 tsp. salt, plus more to taste
- 1/2 tsp. pepper
Serve over your favorite salad or on a crudite platter
Add avocado, vinegar, herbs, garlic and salt and pepper to a blender. With the blender on low, drizzle in 1/2 cup - 3/4 cup of water ( adding more if you want to loosen the consistency of the dressing). Taste for salt and pepper and serve drizzled over your favorite salad.
