Fig and Prosciutto Pizza

Fig and prosciutto pizza is one of my all-time favorite recipes. It is everything I want in a bite of food, salty, sweet, hearty and savory. I also love it for entertaining because it is a total crowd pleaser.

Fig and Prosciutto Pizza

  • 1 lb store bought pizza dough, divided in half 
  • 1/4 cup fig jam, mixed with 2 to 3 tbs. water
  • 6 oz. sliced prosciutto 
  • 4 oz. goat cheese
  • handful of arugula 
  • 1/4 cup Parmesan cheese
  • drizzle of aged balsamic vinegar
  • freshly ground pepper

Pre-heat oven to 425°F. 

On a well floured surface roll out each dough half into a 10" - 12" diameter, about 1/2" thick. 

Sprinkle a pinch of flour in the bottom of a cold cast iron skillet. Gently place the dough into the skillet and place over medium heat. Spoon half of the fig jam mixture over the dough, leaving a 1 1/2" border. Top with half of the prosciutto and half of the goat cheese. Cook for 1 to 2 minutes or until the crust begins to set. 

Transfer pizza and skillet to the oven and bake the pizza for 10 - 12 minutes or until the crust is golden brown. 

Top warm pizza with a handful of arugula, half of the parmesan cheese, a drizzle of the balsamic vinegar and a pinch of freshly ground pepper. 

Repeat with remaining ingredients. 

Makes 2 pizzas.
