Citrus Salad with Pistachios and Goat Cheese
- 4 to 5 oranges, peeled and pith removed, sliced into 1/2 rounds
- 1/4 red onion, thinly sliced
- 1/4 cup crumbled goat cheese
- 2 Tbs. pistachios, chopped
- drizzle of olive oil
- salt and pepper
- handful of mint leaves
Assemble salad on a platter by laying orange slices in a flat layer, overlapping slightly. Top with red onion, pistachios and goat cheese. Pour a drizzle of olive oil all over salad and a pinch of salt and pepper. Garnish with mint.
